Because the revolution wasn't particularly exciting. For the British it was more a continuation of the Seven Years War, the French being the true enemy. For the American middle classes especially the mercantile ones it was about certain taxes that only really affected them. For the average farmer and farm laborer it was a nothingburger. The John Adams series already depicted the build up in a educated and realistic way. There isn't much else to show. If you go for the almost mythological path where you present it as something more than that you get films like Young Washington which were awful films with no real story or meaningful message.

Even the Confederacy Period when America still had a elementary idea of what it was. That would be interesting to see depicted in film by educated people because most people don't know shit about the political system and arguments that existed at that time.

The average American barely understands that they are essentially the gold standard for European conquest and extermination of a native population. Even the most patriotic white American is rarely comfortable with the fact that they are a product of Great Replacement Theory applied to Native Americans. As it is impossible to discuss colonial and early American history without the mention of various Indian Wars, the film industry would simply rather avoid the time period entirely, or otherwise gloss over the uncomfortable truths.

Honest answer: because if they wanted to make it accurate, they would have to show that the bulk of the Southern whites were against rebelling and many even tried to actively help the crown. This would cause a whole culture war shitstorm that simply won’t be worth the effort for any studio.

Look at Cromwell, that film depicts the English Civil War like it was a question of freedom and universal suffrage verses the tryanny and corruption of absolute monarchy. But it wasn't. It had very little to do with class or democracy or suffrage. It had everything to do with religion and the power of parliament, which wasn't really representative. The poorest parts of England stood with the King, not Parliament. The more agricultural regions of America, especially the south, fought for the Crown also for decades all the way up to the Treaty of Paris.
