Aragorn might've gone with Frodo and Sam to Mordor. But he made a promise to Boromir at the moment of his death to go to Gondor instead. If Aragorn doesn't show up in Gondor, Minas Tirith probably falls, since he rallies a whole bunch of men to come with him to save the city. They kill the reinforcing fleet of pirates and then rally the army at a critical point of the battle, when they see his banner on the reinforcing fleet.

Had he accompanied the hobbits to Mordor instead, they might have gotten to Mt. Doom much faster though.

I think that ultimately, Aragorn would have let Frodo go it alone anyways. He respects Frodo's choice even without Boromir. In the films he even says as much to Frodo's face before the orcs attack, but that doesn't happen in the book.

By it's very nature that incident would be extremely consequential, if it's absence would result in Sauron's victory. But if you mean the most seemingly innocuous event, I would have to say its Gaffer distracting the Ringwraith right as he's on Frodo's doorstep, before Frodo has even left the Shire. He didn't need the ring to win. The good guys no longer had a Last Alliance-level army to actually defeat Sauron conventionally. An underrated one is the simple fact that Rohan love their horses. Imagine if their traditions had wavered for even one single generation, Sauron would have won the war of the ring. Not because of the Ride of the Rohhirim, but because Rohan's culture was the one place in the world that could result in generations of horse breeding to let Shadowfax be born. Gondor had a strong army but was stationary and didn't bother with breeding horses the way Rohan did. Other kingdoms that did breed horses in similar fashion turned to evil and were willing to give them to Sauron as tribute, but Rohan would never have done such a thing. Because of this, Shadowfax was produced by generations of horse breeding and born at just the right time to give Gandalf just enough speed to just barely travel across middle earth fast enough to just narrowly deliver key messages and orders that allowed so many crucial moments to happen literally at the last possible moment in which victory could still be feasibly achieved. The fact that Gandalf himself was one of the most powerful allies of men during the war is completely irrelevant if he can't get where he's going, and he's only able to perform his role because some random kingdom of horsefuckers happened to produce the most gigachad horse in the history of middle earth at just right point in time. It's crazy how much hinges on Shadowfax's speed.
