A straight jacket is unlikely to be enough, and a hibernation pod is pretty much the same solution shaped differently and with a greater risk of electrical/mechanical failure causing Luke to wake up unexpectedly and without the lasting side effects of carbonite. A more convenient option may be a medically induced coma administered and monitored by medical staff, but I have no idea if/how that would differ with a jedi.
