Yeah the Red John shit was a disappointment. Would've been a great twist if it were someone more deeply personally connected with Jane throughout his teenage years or his con artist years. Rigsby, Cho, or Lisbon also should've been killed by Red John to really make that Red John death scene feel more important to the viewer because I didn't give a fuck about anyone he killed including his wife and kid I never got to see on screen to care about.

To be really honest, a lot of Mentalist episodes were extremely clever and weren't really anything pulled out of the ass.
I am currently rewatching it (season 4 right now) and I cant think one of episode where it was "huh? how did he know?".

For the first few seasons they aimed for the Fight Club reveal. Every time Red John spoke, it was Simon Baker voicing him. Every time he interacted, he only interacted with Jane. And Baker directed those episodes too.
Bradley Whitford was top-tier Red John, too bad they had to do the whole "he's a fake" to make another season.

The two elements are working against each other

E.g., the viewer might ask, as I often did, "How come like 90% of the time he doesn't seem to give a fuck about catching Red John and avenging his family?"
And of course the answer is that that's not really what the show's about

The show wasn't about the Red John case, not really. It was about Jane and his life. Red John was disappointing but his overall life trajectory is kino, and seeing the show take a final season to show how Jane gradually comes back to life and reclaims what he had previously lost is kino.

I also thought the Red John revelation was a big let down at first, but over time it grew on me.
Hear me out:
It doesn't really matter who Red John was, at least not to Jane, he only wanted to kill him to get revenge for his family (knowing that it probably will do nothing about his guilt), but he didn't really care about Red John's bravado or games. He engaged in them because he knew that's what RJ really cares about.
RJ on the other hand wanted to show Patrick (and preferably everyone else) that he is smarter than him. To him it was just a big game, his ego never could have allowed to just kill Jane without facing him and rubbing it into his face. Jane knew this, as he also knew that RJ's many accomplices and his relatively big influence will likely never allow the CBI to simply capture him. So when the moment inevitably came, Jane goes for the simplest method possible: uses a distraction with one of the few things he uncovered about Red John (his fear of doves) and shoots the guy. Then when he catches up, he simply strangles him. No big speech, no huge revelation. He just goes for it. I don't think Red John even understood, in his final moments, it was like 'why is Patrick ruining the game?', which then turned into genuine fear for his life, begging and afraid, dying like any ordinary man, losing his larger-than-life villain charisma and aura. Very fitting, he got the greatest reality check of his life with no way to escape death anymore.

I also thought that RJ's identity of being a backwater town's sheriff suited him well. Such a lowly, unassuming guy on the outside, yet has so many followers, so much power and influence over higher up people, politicians, policemen, the like. For him it must have felt like a wolf being able to walk amongst lambs undetected, and for a guy with such narcissism and ego that is very suitable. That way he could play his games and nobody ever would suspect him because he is simply out of sight for most people.
