You'd approach a defensive position in such a way that holding it became untenable for the enemy (i.e. by flanking them) and they'd be forced to fall back. Then you go again except this time you might get flanked, and so on, until one of the armies ends up in an indefensible position, a relatively brief firefight ensues (couple hours at most) and one of the parties is forced to surrender. Rifles in that era were also accurate to about 70 yards and took 15 seconds to reload. Getting as close as possible and volley firing was the only way of using them.
