Why do so many people think the events depicted in this movie didnt happen and its just a fantasy? Are they retarded or us media literacy just dead?

Most of your list doesn't bear on the question, because the fantasy reading doesn't claim the whole film is hallucinated, only what follows the Rekall procedure. Everything before Quaid is strapped into the chair is real under both interpretations.

it's because Total Recall and American Psycho are such good movies at the surface level that some people then wander into the uninteresting "well did it happen" question

It's because Arnold is miscast in this.
It's supposed to be about an average looking working stiff who daydreams of being a secret agent.
But of course since they cast Arnold, the audience already guesses that he is actually a secret agent for real even before he visits Rekall.

You should read the short story. Its pretty much one long joke where its revealed the blocked memory that cased all the problems was him saving tiny aliens who were scouts for an invasion fleet from a dog, in gratitude they decide they wont invade earth as long as he's alive, and then he dies.

If it was an implanted fantasy why would it involve being betrayed by and violently killing his hot, loving wife who he apparently had a very good relationship with? I'd have angrily demanded a refund the very second I stepped out of the machine, that's horrible

it's the exact same plot element as the book. secret agent had had his memory wiped going for a holiday implant unlocks his mind block.

Apparently the implanted fantasy also includes a putdown of Rekall workers (let's just dump him on the street).

I guess Rekall had a sense of humour and wrote themselves as the bad guys inside the fantasy sequence.
