Why are her proportions like that?

1 LB pinto beans
1/2 large white onion
4 serrano chili
4 cloves garlic
2 slices of thick bacon
1 roma tomato
1 tbs salt
1 tsp black pepper
1 tsp cumin
1 tsp oregano
1/2 tsp sugar

1. Sort and rinse beans
2. Chop bacon into bite size pieces, place in pot and bring up to heat rendering the fat.
3. Chop onion and sweat in bacon grease.
4. Chop and add serrano chili peppers.
5. Chop and add roma tomato.
6. Add beans.
7. Add stock / water and bring up until 2 inches above beans.
8. Add cloves of garlic.
9. Add salt and sugar.
10. Bring to rolling boil, then reduce heat to a slow simmer with only a bubble or two coming up every so often.
11. Cook for 2 hours and add cumin and oregano.
12. Top off with stock / water as needed. Cook until beans are tender. Adjust seasoning as needed.
13. Crop dust the old lady as needed.
