The amount of force you swing with would still translate through the blade even if it cuts anything and is weightless every fighter would need to still consider weight and force. If someone lithe and slight like Anakin who probably weighed 165 lbs tried a one handed block at a weird angle and a guy as big as Rey Stevenson swung like a lunatic they would get their sword knocked out of their hand or theyd cut themselves when the blade got pushed back. The minmaxxed speed and rapid light swings and ballet style movement would not hold up if you tried to block a monstrous swing and you caught it at a weird angle. So the refined and more elegant dueling they engaged in would disappear. They (sort of) did this with Cal and Baylon.
