Gus *was* planning to kill Walt and replace him with Gale, but that's because he correctly recognized that Walt was an unstable egomaniac. The type of man who couldn't help but do something that would eventually ruin the whole operation. Gale, on the other hand, would have happily cooked for Gus forever and not told a single soul. Similar to Mike, he had no real personal life putting pressure on him, it was just a job. What Mike is really criticizing Walt for here is being the type of jackass wild card who Gus felt the need to kill in the first place.
