Yes, Chinese have been known to use their Kung Fu martial arts in Street Fights, at least in Hong Kong, especially when Bruce Lee was attending school there. I admire kung-fu, I do, but you have to consider that it is something that was developed for a culture where men weigh around 120 pounds.
Trained man will always have advantage over untrained man, if only for knowing what getting punched really feels like, but kung fu is unsuitable for western men. If men are above 160 pounds the way they fight is throwing haymakers as hard as they can until the one with weaker constitution drops
You can see it even in pro-boxing, where lifgtest weight categories have almost no knockouts.
That being said I will always prefer kung-fu in movies, because western fighting looks like shit on screen.

I wouldn't be so quick to dismiss kung fu because a lot of it is designed around fighting opponents that could also be armed. That's why it doesn't do the wild rush in grappling wrestling or distance closers and instead emphasizes maintaining distance, because if you rush in to grab someone around the waist thinking you'd pull off some sick throw or armbar and the opponent had a stiletto or a knife, you'd be stabbed multiple times and be dead before you knew it.

This isn't really true. Wing Chun takes a very long time and a lot of difficult training to master and wield effectively, whereas Muay Thai can honestly be "mastered" in less than a year, which is why it's more popular among guys who are looking to spend their late-teens and 20's breaking all their bones and getting their bones broken in turn and then being crippled for life and addicted to drugs after that.

The Wing Chun people take a lot longer to hone their skills to an effective level but they also can have a normal, healthy life without every joint in their body destroyed by their 30's and unimaginable pain driving them to a life of sickness, poverty, and brain damage.

Traditional martial arts are for people who want to train to be able to defend themselves in a streetfight that hopefully never happens and still be able to walk and talk in their 50's.

There's a reason why professional Muay Thai fighters in Thailand all have their fighting careers from age 8 to 18-19 and are retiring at age 20. Striking wasn't a problem in and of itself. The issue was that a lot of their early strikers sucked at grappling BUT not all of them. If you go back and watch some of the early fights there were some who dominated because they would close the gap on other strikers and do standing grappling.

BJJ got memed up hard because the Gracies were the best at groundfighting while the other guys were fairly weak in that area. The Gracies' whole schtick was to close the gap and get the other person on the ground as quickly as possible and it worked on guys who weren't training on how to prevent themselves from being wrestled to the ground.

For most of martial arts history if you said you trained in hand to hand combat, people would look at you like you said you trained in catching fish with your hands. In the Jixiao Xinshu, a historical Ming dynasty martial arts book, the author said hand to hand combat is useless in fighting. The blunt truth is martial arts today is a sport. The first thing any person or profession who has to win fights does is to train with his weapon. A weaponless fighter is from a more realistic perspective not a very good fighter at all.

The intent changed over time and from place to place. In China idea of what martial arts should be differed from region to region. Hung Ga kung fu for example was developed for practical self defense and for city fighting since it was taught for use in political uprisings where it was mainly commoners fighting each other. They trained in hand to hand and later on added weapons to it. It's why a lot of the weapons in that style are farm equipment.

The people who looked down on hand to hand were mainly involved in warfare between armed military formations. And even then, in Japan at least, swordsmen eventually started in on hand to hand fighting because they had to learn CQC.
