The lead producers have admitted fully that all they cared about was bringing the Red Wedding to television, and when they did that, they stopped caring completely. Which is why the quality dropped after. Then dropped even more when they ran out of source material and had to start making shit up themselves.

Greed and laziness
It became a mainstream hit and normies started watching, especially after the Red Wedding as they wanted to know what the big deal was, but it was too complicated for normies to digest because you have to think slightly when watching it. And HBO saw their next cash cow, and they were scared they'd lose the new casual audience they gained as people were watching it not because they were actually interested but because it was the popular thing and people are sheep, so they sold out and dumbed it down so that normies could digest it better. They culled the cast, added MCU style quips, culled a lot of storylines, and made the characters more tropey.

When they ran out of source material all main character arcs either stopped or reverted back to a previous stage, meaning they attempted to stall for time. As that plan failed the following season was rushed beyond what was reasonable throwing character development and relationships through the window. Everything started to feel absolutely forced. Finally they proved they either did not understand or cared for the established world lore or character arcs. For whatever reason they decided subverting all expectations for shock value was the way to go. Failing to understand would be incompetence, while thwarting everything on purpose would be malice.

The truth is that they were always shit at making their own material outside of minor dialogue scenes. You can even see this as far back as Season 2 when they completely change Robb's future wife. If they actually adapted books 4 and 5, we would have at least gotten some decent stuff before the last two seasons, but they wanted to rush things so they could do other projects (lol, lmao).
Faegon, the golden company, qwentyn Martell, iron islands, the kings landing feast plot, all would have made absolute shit television. George introduced a hundred new shit tier glup shittos and doesn’t know what to do with them, the show was damned if they did damned if they didn’t. Fans would have been satisfied with a generic Disney ending where dany and Jon become king and queen of Westeros or some shit. And I respect the hell out of d&d for not giving the fans what they want, they don’t deserve it
