Outside tweaks to the ending it still follows the story and is comprised of scenes taken from the book. as far adaptations go it isn't really that far. So I don't know why King is butthurt or why people claim Kubrick made it entirely his own

It seems like a pointless argument. They are both unique and influential artists that have shaped American culture for the better, even if their approaches are very different. Stanley Kubrick is high art while Stephen King is pop art, and the later never really tried to be more than that.

The real issue probably that King is upset because the main character of The Shining is based on himself, and they made him completely irredeemable in the movie.

Christine is probably the best adaptation aside from the two you mentioned. I also enjoy Silver Bullet, The Night Flier, 1408, and I have fond memories of the original IT adaptation even though it's kind of objectively bad. He also co wrote Creepshow which is great. The Langoliers is honestly kind of fun too despite being cheap and awful.
