Not how demonic possession works, OP. Both souls are in there, but demons are lazy and typically only exert as much energy as necessary to cause the effects they want in the physical world. As a spirit that exists outside of time and space, Paimon essentially has near-perfect knowledge of all events/probabilities, and only needs to nudge things in certain directions to account for free will, nuts at the party, send the signal to the girl that she wants cake (we all assume these signals are from the Self, or the Body, this is how they get you,) when she's panicking in the car he's still not controlling her directly, just influencing her actions.
