Whitney Houston is a woman, so she can stand in for women in general. Rey is not a Jedi. She received basically no instruction of any kind in the Jedi way, she was never inducted into their cult. She has no real claim to being a Jedi let alone all of them.

She had to have a unique color because she's so special. Purple was already taken and she's not a Sith so no red.

Real reason: it was a color in the EU belonging to a strong woman so JJ stole it. Kybo Ren and Jyn Erbo are EU characters.
