Because the power of the dark side is all consuming and self perpetuating. The more you use it, the more it grows. The more you come to depend on it, the more unwilling you are to relinquish it. The more unwilling you are to relinquish, the more of a monster you become. He fell into a different, evil persona because that's what the dark side does to everyone over time.
