why would you ever bother with status effect resistances instead of defense or health

rings and potions and armor of poison/burn/freeze/whatever resistance are just vendor trash in EVERY GAME

In Souls games, status effect are easily avoided naturally by moving out of the area and letting the build up reduce before their trigger point. The ones you're most likely to suffer from are DoTs, and you can just cancel those with healing items if it's a serious concern. There's no point wasting equip slots on resisting effects, which probably won't offer enough resistance to significantly negate the rare occasions of the effect triggering.

RPGs suck now because they cater to people who are too lazy to perform the RPG mechanic of SWITCHING GEAR

Focusing on switching gear sucks when there's no options for making automatic loadouts so you need to change out each piece of gear individually while scrolling through hundreds of junk items, plus even if there were a loadout system it's useless because all your gear falls behind in level and becomes obsolete every 5 minutes so you need to constantly rebuild the loadouts. Single resistances are usually kinda useless till you run into that one hard area/boss they does 90% fire damage.

I never bothered to try but I think you could utterly trivialise a game like elden ring by swapping restances and your weapons damage type before every major battle for instance.

Really depends on the game.
The problem with all status effects and crowd control in general is, when applied against the player, they can just drag an encounter for too long.
So they're either made as a gimmick that will completely wreck you unless you build around it asap, being somewhat rare and pontual or will be no more than just a momentary bother.

It's to prevent constant gear swapping during fights. You will still get afflicted if you swap to a status defensive gear when close to filling your "bar".
It's a very wonky thing that a few players would manage to navigate and equip all of these on the fly during a fight, but it's there.
Maybe it's also aimed at PvP?

Only if you roll in the rot and it covers your body. Also the ring makes the bar longer that has to fill for you to get the status
