Get Azura's Star plus maybe a few black soul gems (you can duplicate them) and just capture everyone's souls. Not my problem since I just go with unarmed with almost every major, serious character. Hasn't been as good as Daggerfall, though. End up relying heavily on magic. Skyrim came close with the armor-rating damage perk.

just get a daedric or glasss shortsword, put a soul trap spell on it, and get azura's star. use that enchanted shortsword in conjunction with the star, and unless you're fucking awful at managing your charges, you won't have to worry about manually hunting for souls.
