The horror atmostphere wasn't there as much as as DS1, or even 2. It's a shame because an artic world like that is perfect for horror and feelings of isolation. Some of the stuff shown was neat, like the necromorphs from the original colony that spawned from starving survivors eating necromorph flesh.
The new gun system was neat, but partly felt designed to goad people into spending money on microtransactions, and because of that it ruined the balance of the old system.
The plot was really dumb at parts.
Sometimes I wonder if action horror games becoming more action and less horror over time is inevitable as you tend to get less scared with repeated exposure. Only so many times a zombie can jump scare you, and if you are armed to the teeth, then you're not really worried.

I kind of like it when you finally get down to the planet and you're exploring the derelict research facilities.
It has a great atmosphere at that point.
But I find the first half of the game to be really tedious.
The fact that you have a bunch of side quests that use copy pasted rooms didn't help.
It's one of those games that I can see how everything about it sounds great on paper but the execution is just wrong.
I think a remake that took the same basic concept and focused on it being a single player horror game would be kino.

Depends on the game. If Nathan Drake was a mute that'd be hilarious and awkward, the game is far too bombastic. But when you have realtively somber, slower-paced worlds that are gradually being unraveled (OoT, HK, Elden Ring, OG Dark Space), I think it's fine. Also to be clear I have nothing against voiced protagonists, but doing a remake of OG Dead Space and ADDING dialogue to a famously former mute protagonist is a bad decision, in my opinion. It would be like remaking Jak and Daxter and giving Jak dialogue. Clashes with the original tone. Meanwhile in 2 Jak was a mean spirited shit talker and it worked well in that game.

Having played it...

Some pretty major bugs on release, some of them related to the co-op that could prevent all progression forward

The game allows for co-op, which is good and bad. There are entire side sections of the game you will never see if you only play solo. Also many parts of the game have objects clearly designed for 2 people all over the place.

Actual weapons gone for weapon crafting, with a micro-transaction based resource collection as well. DS3 was one of the first games to really try to embrace the loot box system.

Story is a mixed bag as you find out all of Earthgov is just dead at the very start, but not before you find out that they put a Marker on every major human population center.

Ended on a cliffhanger before the DLC ended it with all of Earth being consumed by Brother Moons.

There was a lot of things wrong with it.
