You'll need to get to at least NG++ because you need three different weapons that are made from the same soul. There's also some weapons that are very rare drop rate from rare enemies but really needing to beat Sif three times is the biggest part

You need to grind enemies and join covenants and cut off tails. Not only that but it will be impossible to do in one run as you need to get to ng+ for either ornstien or smoughs soul as you need both boss weapons.
With a guide, a fair grind that will take hours.

souls 100%s are basically some of the easiest shit since NG++ rarely is harder than a fresh save, if you can beat the game you can plow through NG++ and you only need to make it halfway to NG++ since sif and the giant blacksmith is what you need for the plat - even the online stuff can be farmed offline in a few hours - it's baby mode in regards to your time and investment unlike a lot of other games that want you to do something 1k times
some of the more tricky stuff is not messing up any of the NPC quests and min-maxing your resources so you don't have to play longer than you would normally to complete all the required content like getting all the unlockables in a sensible order - there's plenty of guides on how to get this - demon's was the real pain with having to manage your world tendency by either being offline or really gaming the system online so you could get everything and that also had more farming for stuff
