I'm gonna start a new open world RPG and want /v/ to help me decide between two choices. I will eventually play both, and I'm not asking for other games.

Risen 1 or Outward.
Which is better for open world bullshit?

Outward is more of a crafting/survival game than an RPG. You don't gain levels and such, instead you make/find better gear, learn techniques/spells/crafting recipes from vendors, other transactional stuff. From late mid-point to early end game, you rarely give a shit about loot as you will be overflowing with everything you need and that murders exploration a lot.
Outward has a pretty deep magic system as well. The world is pretty empty and you will be spending a lot of time walking around it on fetch quests. It absolutely nails the sensation of you feeling like a character living in the game world and offers couch co-op from beginning to end

Risen 1 is a much more typical open world RPG experience. So if you want levels, stat growth, power progression, etc, it's obviously the better pick

Both have a lot of jank.
