The perfect farming game would have the NPC schedules, events and seasons like SoS with the hands-on gameplay of Schedule I. Stardew leaned into it with all of those processing machines but it was still grid-based plantclick gameplay.

The issue plaguing Harvest Moon/Story of Seasons games is that they are STILL stuck in the past and barely changed as games.
