If Miyazaki wants to make challenging games, why doesn't he just make his games more mechanically complex instead of falling back on low IQ tricks like delayed attack animations and wombo combos?

There is an upper limit to how mechanically complex a game on controllers can be, especially in a 3D game with a free camera that demands that you spend all of your time babying it with 1/6th of the fingers you would use for normal inputs.
If you want a mechanically complex game, go for an early 2000s PC game or something.

Fromsoft games are harder than nioh, both nioh games are more mechanically complex but their enemies are simple and easier to avoid. Its a soft middle ground between something complicated like dmc and something simple like dark souls, except it doesnt have the difficulty, lore and atmosphere of dark souls, and it doesnt have the complexity, skill expression and fun of dmc. IE in trying to be both it fails to truly exceed at either

There's just a lot more nuance to a proper Fromsoft boss than in any Team Ninja game. Trust me I've beaten NGB on master ninja difficulty and I figured the game inside and out but on Elden Ring there's just more to figure out once you scratch beneath the surface.

bloodborne does have some decent mechanics with trick weapon combos, but pales in comparison to nioh. something i wish was expanded upon.

Nope, I've played nioh 1 and 2 and have platinumed every dmc game except DmC, they are alright games but fromsoft games were harder for me and the dmc games were much more complex mechanically. Plus ive had nioh fans tell me I didnt play the game because I wasnt on ng+ 5 and because I used the axe and kusarigama

Ill take simple mechanics with complex enemies over complex mechanics and simple enemies any day. But atmosphere and the world is where nioh really fell flat to me. In nioh 2 particularly that scene where your boy dies was pretty good but golden diablo ass borderlands loot pops out of him right after he dies and it genuinely made me laugh. The games have some good designs though I like the frog with the pipe and the cat girl with big titties

99% of From bosses are just i-frame dodging attack animations until you memorize their punish windows. Then you L2 or R1 during those windows.

The enemies in Souls games aren't any more complex than in Nioh, but the major difference is that they will have absurdly long combos these days where you either have enough stamina to dodge or block the entire bit. Most don't have any unique mechanics to set them apart and those that do are largely considered gimmick bosses or enemies. The walking eyeball stalks in SotE being damaged by parrying them is novel, but then you just quickly either rush past them or use the stealth to avoid them entirely. Most of the Souls enemies biggest weakness is that you eventually learn you can speed right past most of them without too big of an issue. It's probably why the first couple souls games force you to fight them in small confined spaces to make you fight them.

main reason why i get bored with the newer souls game because of all the anime attacks bosses do. you can even't do full combos with most weapons during those windows
imagine adding weapons with unique shit but you barely use them because of how bosses work

i'm talking high IQ Ph.D students in applied sciences who not only perform well in their studies but also maintain healthy social lives, physical hygeine, and actively partake in professional pursuits that generate substantial revenue while also contributing to the progression of their fields
they're not just book smart nerds, but genuinely intelligent high-performing individuals who i can confidently consider the smartest people i know
imagine my shock when i spend time with them and see them unironically spending money on gacha pulls or grinding clash royale in their limited free time
you can't use game complexity as a direct measure of intelligence, because the smarter somebody becomes, the more cautious they become of how they spent their limited daily mental focus
i'm sure you can find somebody smart who enjoys complex games, but the odds of them being underperformers in their professional responsibilities as a result of them spending their cognitive energy on demanding and unproductive pursuits is high
from what i've seen, the smart people tend to enjoy casual gaming for quick dopamine hits inbetween their free time

they either study more, or go outside and build relationships or do networking
they're always productive, it's amazing to see

don't let a complex game make you feel smart

Most people don't want complex combat, if its complex and forgiving they just keep spamming the same attacks over and over, if its complex and hard they just give up. Souls is popular because the combat is simple.

Dark souls but you also loosely command an entire company of NPCs? Scale up the threats to match?
You need to manage the logistics of keeping your army fed and maintained.
You need to stabilize regions so that local villages produce peasants for you to conscript into your army.
At end game you can claim a fiefdom to generate more supplies which can be used to maintain a larger army.
You can commission infrastructure and developments on your land, elevating it from a village to a town. to a city, to the metropolis at the heart of your kingdom.
...
