Nobody even really tries, it's either some low effort minigame among many where all you do is time one press and maybe do a little mashing or it's the same tired hold opposite direction and manage a tension bar shit.I think the only game I know of that tried or is trying to do something different with it is Sinker Sound and I'm a little optimistic for that but it is still at its core hold direction and manage tension.

Because fishing isn't innately fun, it's a relaxing activity for a long period of time. Asking to have a fun fishing mechanic is like asking to have fun truck deliveries (see Euro/Americunt Truck Simulators).But for every other game that isn't explicitly about fishing, fishing minigames are just an obstacle to get to what you want (resources, progression, etc.), and you can't overcomplicate it either the same way you don't complicate mining and cutting trees.

I think the last and only game I put any effort into fishing was probably Breath of Fire 3. Catching a whale with a fishing rod was cool.
