Because you can vary the timing between the jumps to do different things.Do it early to gain more height, do it late to gain more distance.
It breaks physics as you have to live with it so you think its cool in itself.Same can be said of those anime moves where a guy throws a 100 punches then pauses then you see the 100 punches or sword slashes connect at once.Its just cool because it isn't realistic in any way.
