Why do the demons of Dark Souls 3 look so different to those of Dark Souls 1? Is there a lore reason for this?

Dark 1 demons are first gen chaos creatures with vitality directly from the chaos flame.
DS3 are the degenerated descendants as the Chaos Flame had faded and finally gone out by the time the game starts.
They are the last generation are are basically the last smoldering embers of chaos.
You can also see the DS1 version memorialized around the ruins.

They tried to make them cooler which just ended up making them look more lame and generic. Das1 made the demons seem entirely like an amalgam of men and animals, spawned from the Chaos Flame but not trying to look like literal denizens of hell. And prior to reaching the Demon Ruins, they all had this aura of originality and intimidation. Like the Taurus and Capra demons guarding and overseeeing parts of the Undead Burg or the two Asylum Demons guarding the first area.

anon, it's been hundreds, if not thousands or years, they changed as time went on due to their environment changing, and from being so far from their origin (the chaos flame)

Two on the right are fiery reskins of the Taurus and Asylum Demons. The Demon Princes in DaS3 are the last demons in existence and were beaten in the past by Prince Lorian.

the lore is that ds1 was an experimental project based on demons souls where demons are not usually fiery, and ds3 was a mainstream title in an already popular series so demons were made into fiery monsters because that's what general audiences expect.

The ones on the left are random demons and the ones one the right include the demon king and demon prince respectively so like high ranking demons probably taking more power from the flame of chaos as opposed to some random ass guy.

I noticed that you left out the stray demon from DaS3 which has a design more in line with the right.

DS3's aesthetic was guys on fire. All the lords do it too, Sister Friede's 2nd and 3rd phases add more fire as well. The player character can also ember to match them. Demons were already based around in the fire area in DS1 so the ember look is a natural match.
