To me it's the fun of mixing items together to make weird builds. A good one that comes to mind is Planula + Helfire Tincture + RAP + Voidsent Flame. You become an indestructible walking meteorite that damages everything near you. Did this build one time and I was set for a good 10 stages, probably more if I didn't decide to fight the Voidling afterward. If you don't have the SotV DLC I feel like you're missing out on some of the other great things this game has to offer.

Clearing levels faster is generally considered better but if you're just starting out take your time to get familiar with all the items in the game first. Just play on Drizzle. Once you get more acquainted with the game a good rule of thumb is to spend no more than 5 minutes on a stage if you can. But honestly if you go over it because you had a specific build in mind it's not a big deal. The thing you really DONT want to do is wander on a stage looking for every possible chest. That's how you ruin runs. Difficulty scales fastest if you're on Monsoon, but it takes a more skilled player to get to that point.

It's a good thing the final stage was literally made to waste as much of your time as humanly possible unless to stack mobility to cheese it

Prioritize items but don't do shit like sit around camping a chest waiting for enemies to spawn for money, just start the boss and make note of chests to open afterward.
