There are definitely some nods to classical music besides the instrumentation. Lumiere for instance is a straight up baroque chamber quintet, with the straight forward repetitive modal harmony and counterpoint mixed in. Much of the music is of course influenced from French folk music as well. Although like any video game score it does borrow mostly from 20th century film music.

If you want classical music in anime, try World Masterpiece Theatre, or Princess Tutu, even implicitly modern works like SAO use plenty of classical or classical styled music.

The problem with modern popular music are the producers who have decided to manufacture music to such an extent it's become a formula, not in the sense of music theory but pop music itself is a strict formula now that producers work from. The Singer itself is irrelevent in modern pop music, which is why video game music is a breath of fresh air for a lot of music lovers because it doesn't adhere to those strict formulas there are still composers, people who write music, and it is enjoyable exp33's OST for example was top Billboard number 1. This is proof that people do enjoy composed music, but the difference is in the platform.
How do a lot of people hear music in the first place, how do they discover it? From the radio or t.v. shows or advertisements right?
Which means those shows have strict time schedules and radios have strict time slots they need to adhere to for advertisement placements, or the music itself needs to fit the theme of the show upbeat music for example fitting a morning breakfast programme you're not going to have Alicia from Exp33 play in the morning on the radio commute to work.

It sounds amazing when you hear it for the first time because it amplifies the experience that you are PLAYING at that moment, such as wandering in Lumiere and taking in that magical lore and world design, or the dramatic battle agaisnt Renoir, or the theme of any of the areas, which also step into the battle themes.

You listen to it again and it feels great again because you relive the joy of playing that part of the game that the track came from. It is the game that makes the soundtrack work. There isn't any video game soundtrack that would work in a vacuum except for a few vocal tracks. In terms /v/ would understand, it's the good art style vs. good graphics (realism) argument. E33 has "good audio quality" because the music was recorded in a studio by real clasically trained musicians (in reality, only some of the tracks are. There are a shitload of tracks and tons of them sound very amateur from what I've seen. But the main title theme at least is very well produced). But the compositions are simplistic and repetitive and nothing particularly special. It's like a game that focuses on bland realism and photogrammetry compared to a game which is unrealistic but crafted with love and care by actual artists. A midwit with no aesthetic sense will prefer the former, patricians prefer the latter.

The choir part alone is at LEAST a 3-part harmony because that's what it reduces to on piano, but in reality it might be even more voices than that.
