Basically a CPU is made of metric fucktons of individual little dies that help run what the cores put out. If a single one of those fail, the whole damn thing shits the bed royally. The larger span a CPU has, the more likely one small dink or short has a significant failure across the whole device. And then there's the heat; AMD runs more cool and less wattage than Intel at the cost of less productivity efficiency for workbench stuff and rendering, but the bigger your shit and the more dies that have to be run, the wider spread and stronger emissions of heat that result. We literally have all our computer cases and consoles designed as is around articulate fan structures or AIO liquid coolers, a bigger CPU standard would functionally require entirely new setups and larger machines - and the Playstation 5 is already fuckhuge to slap a fan in itself to try to cover its ass for cooling despite being shit at it.

Now imagine a Playstation 6 the size of a mini-fridge just to handle a bigger CPU.

It's only a matter of how you configure the chip. Nvidia adds some ARM cores to their million dollar AI server GPUs just so they don't need to give any money to Intel or AMD. Technically those chips could be considered APUs too.

I think the issues is that consoles have always targeted resolutions that are a tier above where they should be based on their hardware. PS1 should've been 144p, PS2 240p, PS3 480p, PS4 720p, and the current gen should've been the first 1080p gen. That would've allowed studios to more easily target 60+ FPS. Instead we've had a hard focus on 30 FPS or unsteady 60 and now shitty image reconstruction blown up to 4k from sub 900p resolution.

For home CPUs I think AMD recently surpassed Intel in marketshare, but I think overall Intel still BTFOs them.

AMD is cost effective and less power hungry overall, but that's basically bang for your buck on the gaming front, especially with X3D even if they're largely overkill and something like a 9600X can get the gist of the job done for way less cost. Intel's best can compete but at far hotter temps and wattage, so they're not power efficient by comparison - but in exchange, for computer workstations and things you'd be using for workplaces? Intel is upwards to 2-3x the performance of AMD last I saw, leaving AMD completely and utterly in the dust, albeit at notably higher price costs.
It's not much wonder that all three console manufacturers have gone for AMD simply because it hits every single note they need for a console footprint and design.

Look around the recent releases of CPUs for general benchmark comparisons, but Intel will probably win the productivity scale for you unless you're explicitly going for an AMD Threadripper - which sucks for gaming in turn since games don't make use of all those cores it tries to optimize around. You're paying for wattage and temps vs. overall statistical efficiency per dollar. If you've got the money for a production computer and a gaming computer both, Intel for the former and AMD for the latter every time unless you're really not too bumed about how long it takes things, or some Intel faults in recent years you want to be careful around.
