Not mgs2 and 3 no. They rely on pressure sensitive controls that the playstation controllers have to function properly. You won't get the proper experience.

MGS 1 and 5 are ok to play on a keyboard but 2 and 3 have pressure sensitive controls for guns so you can't lower your pistol without shooting or unequipping it and you can't aim with assault rifles in first person view because you start firing the moment you press the shoot button, holding up guards and shaking them down feels weird because of it. I don't know if the Master Collection fixes this.

There are analog keyboards so in theory it can be done.
And it's not like you can just separately bind the light press and heavy press, providing you're not emulating.
Frankly, the biggest issue (aiming and shooting on the same button) is trivial to solve.
That leaves only one problem as far as I can remember, which is accidentally slitting someones throat when grabbing them. Again, a trivial solution is to just use more face buttons, pretty sure X is free. It can definitely be done.
