maybe you might like designing ships with moving subgrids and automated systems, but if that doesn't tickle your fancy, then I'm afraid you've already seen the whole game
you could install Modular Encounters System and its submods to stretch it out a bit by adding more PvE

people who are really into the game just like designing ships in creative, or self-limit themselves to make their own fun
e.g. no jetpacks so they have to make all their builds walkable and have to use repair ships to do all their construction (you can place blocks while in a cockpit with Ctrl+G)

the only major addition since then is the AI blocks that add player and enemy drones
you can set the drones to intercept/ram into enemy ships, so no more scripts for building missiles

there's an endgame encounter with really tough enemies that you need to build beefy ships for, maybe even your own drones
they also use missiles too, don't sleep on your point defense

the survival mechanics didn't add much unfortunately
just a tiny incentive to pressurize some interiors
btw they didn't allow automatic replanting to "force players to interact with the system" just some more bad game design that you have to mod out

space mining ships could be anything, since you don't have to bias the thrusters to one side to fight against gravity
I recommend designing two ships, one a freighter that can carry your entire haul, and the other, a smaller (small/large grid) mining ship that's easier to control

Never, in my experience. It sucked in 2013 when it first came to early acccess. It sucked in 2015, 2019, 2021, 2023, and, guess what, it still sucks. I hate how everything is block-based like Minecraft. I don't want to play Minecraft in space. I want to play a game where you build stuff and explore.

I'm hoping that Space Engineers 2 will get rid of all the block-based nonsense.

I had to use AI blocks to force my turrets to target the enemy ships at 2k range, because the enemy was firing at me from 2.5k km away and I could not do shit against it.
I ate 2 artilllery shells to the broad side but otherwise came out unscathed

When you start actually challenging yourself in engineering. Build a 50-km ranged missile that can scatter bomblets and decoys at terminal approach and make it fit into a launch bay of your ship. Make a VTOL ship that can drill 200 m below the ground. Install a speed mod + real orbits and try to make THAAD to protect your base from orbital bombardment, or go the other way around and design a payload and fire control scripts that can strike a waypoint precisely. Also mods that add torque to off-axis engines make building a hundred times more enjoyable

I find it pretty hard to explore and try those nifty things in survival due to constant lack of resources
