Playing it for the first time and just beat Psycho Mantis, so I think about halfway through. Am I the only one that thinks the gameplay is abysmal? Did it just age poorly? I dig the story and music though.

I recently played MGS for the first time and I think the only time I thought the gameplay was outright annoying was the Revolver Ocelot fight. The beginning health bar is just too small for a boss fight that early in the game, you're kind of forced to cheese it by just using the Square+X run to chase Ocelot around instead of actually outgunning him.
Meanwhile after one or two bosses your HP balloons so much that you're never in danger in combat.

Yeah, that's part of what's fucked up with MGS1. I could easily kill every guard I see with the suppressed SOCOM...if I could fucking aim the damn thing, as it stands it's only useful against bosses and you just awkwardly aim it in a direction and pray. I look forward to that then.

The stealth is too easy, literally just don't go through the cone on the minimap, hug the wall to get past cameras, done. "Tactical espionage action" should be more than that. Maybe it gets more depth later in the game, I don't know yet. The combat is very simple, no more interesting than Mario jumping on top of enemies.

Being "simple" or "easy" does not equal "abysmal". I don't know where this idea came from.

Sometimes, that simplicity IS the thing that draws people in. It's easy to read, very tactile, and any fuck-ups you can only blame yourself on.
And again, not to sound like "back in my days...", but it's very important to stress how rare any sort of Stealthan' was before 1998. MGS1 and Thief 1 both practically sparked and skyrocketed the genre into popularity, a decade after the OG 2D Metal Gear games.

It equals abysmal because it's not fun. It's work. I have to do the stealth thingy to get to where I need to go. I have to do the combat BS to get past the boss. I'm not playing the game excited for any of those things, I'm excited by the story. In this way the game feels spiritually like a JRPG.

eh I wouldn't use the term abysmal. I think the fundamentals are mostly fine, the only element I would describe as bad would be the socom and famas aiming and that's just not a huge part of the game, action is mostly focused on getting into a position where you can do damage against bosses, not precise aiming or a lot of gunfights with guards.
Is the difficulty balance in the second half of the game wonky? yes.
are stealth arenas to scarce and easy? yes.

mgs2 mostly solves these issues. guard vision is a good deal more threatening and the level design is more dense and constricted. also you can play on hard without having your radar taken away.

Tip for every boss: Just use codec, they'll just tell you. You're probably doing this but seriously there's a few fights that people don't know what the fuck they're supposed to do and the answer was just to use codec to naturally learn it instead of looking it up.

This is the effect that homogenizing all gameplay mechanics has wrought. Zoomers are averse to learning how to play a game. You're not supposed to be able to headshot every guard across the room. The remake, Twin Snakes, did that and it sucked.

They remapped them, so the pressure sensitive controls are now their own discrete buttons. It's much better, so now you can hold someone up with a gun and not accidentally blow their brains out because you let go of the button too fast.

It kinda is. After that point, the game forgets it's supposed to be a stealth game, with subsequent maps barely having any stealth at all.
Also, get ready for a boss rush that will drain your resources dry.

The Master Collection was notoriously shit at release, but Konami was ridiculed so much that they course corrected the same way Nintendo did with the N64 app and made it one of the best ports.

Get a cheap Dualshock 2 or 3.
Then play them on PS3.
For DS2, get USB adapter.

Failing that, the PC Master Collection ports with fan fixes are a OK alternative.

Funny you say that, one of the biggest complaints about the Twin Snakes is that the MGS2 style gameplay trivializes multiple moments of the game

My last playthrough was back when I bought the legacy collection for PS3. The game is honestly overrated. Doesn't mean its bad. It is still a cool game with imo the best setting (shadow moses beats all the other places in terms of setting the mood and theme), the music, and even the cast of characters.

However in regards to the actual gameplay and how they actually utilized shadow moses? In hindsight this all could have been way better. The game benefited a lot of being one of the first of its kind ever. Its probably THE GAME that popularized the movie game. More so than even FF7.

The stealth sections are just padding between the boss fights and action scenes. It's still a good game except for that torture scene, just not an amazing stealth game. If you want a good ps1 stealth game check out Tenchu: Stealth Assassins .
