I like eating sunflower seeds and am looking for a good game I can enjoy that's slow-paced enough I can play it one-handed while I enjoy my seeds with the other.
And no Runescape. I've played enough of that one as it is.

Check, but I'm holding a bag of Ranch-flavored spit shells and a mouse. Your move, cowboy.

Turn based JRPGs in general are your friend for one handed gaming. A lot of them even have the L button mapped to "Confirm" by default for exactly that purpose, but if you use emulators you can remap most games to do that, and even add L2 to "Cancel" for even more convenience.
Steam Input lets you remap every game however you want, and if you have a Steam Deck it's even easier.

I'd recommend Dragon Quest XI and Shin Megami Tensei V for modern turn based JRPGs that are perfect candidates for this.

I take them individually, hold them between two front teeth to crack it, get the seed in the middle, then toss the shell in the designated shell bowl.
