Magic is supposed to be something esoteric and difficult to understand. Thats why wizards are intelligent.
At its most fundamental level, the gameplay for a spellcaster should be different from a martial fighter. They shouldn't both just be pressing the same attack button except the wizard shoots a ranged fireball. Castlevania SotN is a good example of this. Where you just press square to attack, but to cast apells you need to do fighting game style inputs.

Enchant Farm is a JRPG with Pokemon's type system.
Being a JRPG means enemies have giga-inflated healthbars so hitting 4x weaknesses with STAB does matter.

I like how Dragonfable does it. There's all the general elements including Darkness + Light, a joke element called Bacon that's plot relevant, Pierce (effectively melee), basic (technically elementless) damage used for general purposes and also a Good element distinct from Light for plot + narrative reasons.
Then every single character including the player has different levels of resistance to elements ranging from taking double damage (-200) to healing from the hit (200), with skills on the player and enemy side that both influence those stats to go up and down.

Yeah, it's unironically an important part of the game's lore. It's even related to how they ultimately defeat a darkness elemental that has become so large it could swallow the sun and blot out the stars in the main storyline. I apparently forgot about some more niche elements too, but they're more for gameplay purposes than proper elements.

Make the focus of either 1 or a combination of 2 of them define a unique class. I guess it's really just the setup for a modern ARPG system or Quest 64 taken a step further.

You can do this without explicit element systems, though. You can have 100 different tags attached to different attacks but it can just follow common sense and it wouldn't need to call attention to itself the way a Pokemon-like element system would.

Having weird-ass elements mean you naturally get more original magic stuff than the stereotypical Fireball, Airdash, etc.

... or just a single Element, like Fire, and then a whole bunch of magic branches that are basically all fooling magic into accepting different dubious definition of what count as "Fire" and/or wrangling the element into filling non-"natural" niches, that would "normally" be taken by other elmeents (like improving cauterization to make healing spells out of flames, making a flame that feed on ambient heat to create cold, etc).

Genshin and Pokémon systems have *very* different aims.
Pokémon just want to make sure a dumb 6yo kid just need to know the element table and find a pokémon or a type that will destroy the local gym to progress. That's why the bonus/malus are so fucking large.
Genshin want to make elements be about your team's internal interactions, it's the opposite of pokémon were the focus on interacting with the enemy.

DnD used to be about crawling dungeons with low power fuckers.
Fucking up traps/locks/enemy gear with a vial of acid bought from the local alchemist used to be part of the expected possibilities.
So Acid was a damage type very early on, mostly to denote that it could be used for this kind of shit, not just regular-ass "mess this shit up" damage.
Then it stayed stuck that way even when the game evolved to be more and more gamey, so Acid is now a regular-ass damage type.
