If anything, just improvements to the landscape to make Hyrule feel more alive would be a huge benefit to me. That doesn't change no matter how much routing you do around that. I like that they did a good job of making all that extra running around you end up doing meaningful, since it teaches you more about what left the world in the state that it's in, but it's still optional and you'll never get anything in doing so that will give you the ability to do something you couldn't before because that would mean you HAVE to do that before you visit Hyrule Castle and thus the game would have a real critical path.Leaving the game as open-ended as it is but simply making doing the Divine Beasts a genuine requirement to get to Hyrule Castle would have probably placated me sufficiently, because then I HAVE to do something out in the vast open world before setting out to topple Calamity Ganon. The pieces are all there (destroying the Blight Ganons reawakens the Divine Beasts and therefore turns the tide in Zelda's stalemate against Calamity Ganon), the only problem is that isn't required (if you can handle the onslaught you can fight your way straight through Hyrule Castle, the game's not stopping you from trying or preventing your attempt but you'll just have a bad time).
I refuse to play the original now, it's been too long and the game aged like onions milk.

You unlock a first few dungeons (perhaps child dungeons in an OOT Remake) that could be completed in any order, but are surrounded by supplementary dungeons that require all items gathered from them to be accessible.Then you unlock another 4 that give you more options, then another, etc. You could still have open ended gameplay, but there's still some of that gatekeeping to maintain some sense of structure. All the while there's tons of other smaller dungeons to make use of those items and abilities you're unlocking.I know you described BOTW specifically, but if its overworld design is kept in future installments - I think this design is a decent concession.
I guess maybe having the Divine Beasts reawaken to weaken Calamity Ganon might be seen as a retread of Majora's Mask's design (well, actually it is, it's just not a requirement in BotW) but at least that game still required you to do that in spite of it.
