Pacific Drive I think has this in the form of car quirks.
LUTOIt's a pretty mid trauma dump horror walking sim but it does do some really neat meta fuckery without spoiling anything
Eternal Darkness has some fun things happening when your sanity meter drops low. Like turning your TV volume down, giving a BSOD, having your char shoot himself while reloading and so on. They're fakeouts and no real harm or loss of progress so it's more fun than annoying.

MGS has some famous moments, like the whole Psycho Mantis bossfight, the sorrow suicide pill solution, and even sillier things than that, like hidden minigame nightmare dream sequences, easter eggs with comedic cutscenes, you could make a whole Youtube series on the quirky little pranks that series pulls on gamers.
