DS2 tried too many interesting new things, almost all of which were good on their own, but they didn't mesh well together and the whole was less than the sum of the parts
DS3 was just a refined and more straightforward version of 1 with faster combat, not inherently bad but not memorable or interesting
If they'd added the "recover some of your lost health by attacking quickly" from bloodborne to DS3 it would have been a better game, it's a very good mechanic to make combat more fun and encourage more risk-taking. Lies of P benefits from it immensely.

I don't think Dark Souls 2 gets enough credit for leaning more into the PvP aspects of the souls series. Now in something like Elden Ring there's dedicated parts of PvP for those who enjoy it. DS2 isn't that bad but it's still my least played souls game.
