It's very simple. Exceptionally skilled people can bring the most out of a simple PvP game, but it's not going to draw a crowd. Modern day eSports have to be fun to watch or it won't draw enough interest to get prize pools, and most people aren't going to dedicate their lives to something without any reward. I'm sure there are a few Billy Mitchell types who have been playing Pong for 50 years, and maybe those Pong masters meet up and play each other, but people won't care enough to watch their performances

The ball doesn't accelerate over time in Pong iirc so it's boring as fuck.
Make the paddles smaller and the ball faster as the game goes on, and now you have a fun game.
Watching real ping pong is more fun anyway.
