Final Fantasy 3
SMT Strange Journey might fit what you're looking for- you can customize your whole party pretty early in and the game respects this isn't your first rodeo in the genre. The only downside is unless you've played SMT before you're starting with the best one.

SaGa 1 and 2, they're made by the same man who designed FF1 and follow the same exact formula but with better gameplay, if they're too retro SaGa 2 has a modernized and very good remake on the NDS that got a pretty good ENG patch ages ago.Any classic dungeon crawler, Wizardry, Dungeon Master, M&M, you name it, if you want something balls to the wall hard and grindy with a ridiculous amount of class and race configurations check out Elminage Gothic, the PC release isn't the best but it's the only localized version of the game.

It's cool how the further you get the more little short cuts you uncover to make getting back where you were easier, almost like a turn based metroidvania. The issue for me is that kind of turn based gameplay doesn't really hold my attention that much, and if there's no story or characters to get invested in I'm even less interested.
