Major releases don't do pre-release demos anymore because fuck you but demos in general still do exist.
If a game has a demo on Steam I'm much more likely to buy it after trying. If there's no demo I'll pirate the game to try it.

Forgot to mention, plenty of games out there also do alphas and beta playtests and there's communities dedicated to it, you can even get paid for it. Some developers use platforms like Itch.io to upload builds of the game as they go before they release. Pirating is also a thing you can do.
