They just want an excuse to test on fewer platforms. It probably won't change anything but now if someone complains about something breaking in a future update they can just say upgrade your OS.

Koei Tecmo put a similar notice on all their games' Steam pages. I'll bet it's just them not 100% knowing what that "end of support" means for them, and the disclaimer that things might break is their way of telling people that it might be out of their control if it's an OS issue.
