The Mario from Super Mario Bros 1 through to Galaxy 1 is canonically fucking dead. The galactic explosion at the end of the game killed everyone and remade them. However, as Rosalina explains at the end, the circle of life and rebirth means that those reborn are not quite the same as they were.

Replaying these games now and it only really struck me when I started playing Galaxy 2 and Captain Toad and the gang outright introduce themselves like they're meeting for the first time. Well of course they are, this is a NEW Mario who was born after the last one disintegrated into cosmic matter.

Does this bother anyone else? It's actively disrupting my enjoyment of Galaxy 2.

Okay, even if you remove Galaxy 2 that just means that the Mario from 3D Land/World onwards is the new guy.
It doesn't change the fundamental issue with Galaxy 1's ending. Everyone lost, the original Mario universe was annihilated.

No, there is absolutely continuity between the two Galaxy games. One of the early stars in 2 is "Bugaboom's Back", which of course implies that his appearance and defeat in the first game is canon.
