They could've just been general heal sprays (and the remake gives you those to start) but instead you get to mix herbs and decide what you want to prioritize. Do you mix green with blue for some healing + antipoison, or do you mix red and green for max healing? In later games, are you mixing 3x greens for max healing or sticking with red and green to add blue in the future?You get to make choices and get to live with the choices you made.
