Also in this case generating with the A.I. itself isn't a trivial matter unless you want dogshit slop results. You'll have to work with very long, complicated prompts and controls, and have deep knowledge about how the overall process works. You'd probably want to create your own models/lora or their equivalents in whatever A.I. system you're working with. None of that is particularly easy, though quicker to learn than learning a programming language (for most people).

Sauron wasn't openly looking for it and was still laying low as the Necromancer in Dol Guldur. He didn't even know it was still around and assumed the Elves had taken it into the West or it had otherwise been secured some place beyond his reach. It wasn't until Gollum was later brought to Barad Dur and the identity of the One Ring was tortured out of him that Sauron suddenly knew it was still around and bent all his power towards reclaiming it. He literally took an intangible spirit form as the Eye (although the movie version of that is ridiculous) in order to devote himself to finding it.

tl'dr Sauron wasn't actually looking for it until Bilbo had already given it to Frodo and Frodo never used it
