A new version of the game engine built from the original source code but designed to run on a different platform.

Because your modern PC doesn't run DOS natively. You can play it in an emulator if you want, or you could get machine that can run DOS and then just play retail DOOM with it. There are source ports which change nothing about the original source code aside from what is necessary to get the game running on a modern machine. Arguably these are the same as running DOOM natively.
