Definitely Tekken 3. Not only was it the first "cool" 3D fighting game, it was so fuckin cool that nobody gave a crap about any other 3D fighting game ever again except for lone titles here and there. I don't count Soul Caliber because that was from the same company.

Virtua Fighter or Darkstalkers. VF became THE template for 3D games that everything was spun off from for over a decade, and DS is how we got to both MvC and Guilty Gear. If you count platform fighters and arena fighters then it's obviously Melee & Naruto Ultimate Ninja Storm for those.

Mortal Kombat. It's the only IP other than Street Fighter and Tekken that any given person on the street might know and is iconic outside of its games just as much as within them. It popularized visual styles multiple times, was front and center in creating the ESRB, turned popular arcade myths real in sequels, and has been willing to just do shit more than any other major fighting game IP. Shame 90% of the games suck ass.

In cultural impact in the west it's Mortal Kombat, no contest. Not only in popularity, but just consider it went as far as being the main culprit responsible for the creation of the ESRB, affecting every videogame ever made since.
In the technical aspect probably Virtua Fighter, it was pretty much the SF2 for 3D and every 3D fighter ever made copied it, even though it has been dead and eclipsed for years.

It didn't even have 3D backgrounds in the playstation port, which is how almost everyone played it. It succeeded because it looked cool as fuck, the characters were awesome, the sound effects and music kicked ass. It completely blew away the (frankly) lame presentation from Virtua Fighter and other 3D fighters. That's why it succeeded and was influential. It was so god damned cool that everyone else just gave up.

Many, MANY fightan devs have cited Virtua Fighter, specifically VF2 as a major inspiration for some of their games, and VF2 was so ambitious that the tech they used for the game actually helped the US' flight system or some shit and if I recall, either helped founded Nvidia or inspired the Nvidia guy to pursue his dreams. Pretty sure I'm getting that wrong but some autist will correct me.

The ringout is great because you can get sudden surprise wins and losses, which raises the tension. It's one of the reasons Smash has been so successful, because you can lose at *any* time, not just when you've taken a certain amount of damage like other games. I love tekken but I wish the game was built with ringouts in mind.

-Mortal Kombat was THAT popular, and its infamously the reason the ESRB exists
-Tekken 3 was a big push for console-oriented fg
-Asuka 102% is THE origin of the anime fighter, without it you would not see things like Guilty Gear happen
-King of Fighters was a progrenitor of shoving a fuckton of characters into 1 game + team battle stuff
-Super Smash Bros, i do not care how much people denounce smash bros as a fighting game series, this shit has influence even if you put the rosterfaggotry aside
