Any more and it takes too long managing the members / issuing commands.
Large parties only work if you give broad commands and the CPU takes over individual actions.

I feel like 3 or 4 is too limiting. Especially if there's some variety in elemental attacks and status effects. I hate when 2/3 or 3/4 of my party is just the "spam one certain move" character (i.e. "stun guy", "heal chud", "poison goy").

Four gives you more room for character variety.

5v5 was tolerable here because it was basically an early autobattler before those became a mainstream thing combined with a rudimentary RTS. If you had to command all 5 of your guys against all 5 of their guys with each map encounter it would have been a boring slog.

Generally not dedicated tanks, but sometimes there'll be characters with skills that let them take damage for another occasionally.

Honestly, with how varied these rosters are most of the time, I would prefer 5 to 6, even though that's not common. Expedition 33 having 5 characters and only using 3 was infuriating honestly. If your first team got knocked, your second team was guaranteed underweight.

It would be nice if there were more five nigga games just so I could experience more of them, but I do prefer four over three. I always end up wishing there was another party slot in three nigga games because there's always another character that I want to use. I never really feel that way about games with four party members, I guess I just always end up with four favourite characters in JRPGs..
