Levels are overall more fun to explore and have more interactions than in any other souls games. Paying attention to your environment can turn the tide over in encounters for example.
Enemy placement, other souls game (especially DaS3) has way more ganks than SotFS so I don't understand that meme. The enemy placement in SotFS is fine, what people mostly cry about is that they can't just run past everything.
Gameplay design? DaS2 has more risk and reward by stamina not being free, the magic system is best in the series, bonfire ascetics, ng+ changes, most different ways to approach the game and the progression (even more than ER).

I just don't like the weird movement (your character snaps to 8 directions like on fucking WASD lol) and the odd mo-capped animations. DS3 and Elden Ring went back to the DS1 style animations and that says a lot.

In an eventual remaster, I want them to pretty up the graphics (mainly the lighting + some textures) and literally give me DS3's movement/anims, and it would be fucking sick and I'd probably finish the game 2 more times.

I have multiple times. It's really easy because that area is not a gank even by the meme definition. The enemies only aggro once you reach certain points in the level so it's entirely in your control when and how many you fight. The only exception is that the mages have a longer aggro distance, but their spells are easy to dodge to the point that literally just slowly walking to the side makes them miss every time (Or you could just use a shield and you can run to the next breakpoint too).
I'm curious what your definition of gank actually is honestly.

What happened is that the CEO of the company, Naotoshi Zin, shit the bed by appointing one of his senior directors as director of the game because "fuck Miyazaki if he thinks he is better than us". Said director, Shibuya, would then shit his bed, forcing Zin to fire him and step in himself as a game designer whilst sending the new director on a long PR tour where he couldn't really do much directing.
And the end result is DS2, a game for retards.
Naotoshi Zin was fired from his own company that he started, Miyazaki took over, and the rest is history.

to be honest you can manage most of that in a different way. I agree with you that its not as simple as just making two animations and calling it a day, you have to set up everything and in gaming with so many variables it can be a mess.
In this way id even go the method of applying a modifier to bend over the bones instead of having it being a blend of two animations, so that it wouldnt be needed two versions of everything and this tiresome weight could be applied at any situation (althought this method can bring some visual bugs if the effect is too strong with some specific animations).

I don't like dark souls 2 because the level design and a lot of bosses are trash. The actual weapons leveling, meta and multiplayer don't matter to me in the slightest. Every level just felt like a drag and I wanted to get it over with. Dark Souls 3 wasn't all that much better and I never played a souls game after that. DaS2 is super weird because in the parts where it looks good, it’s way nicer looking than anything in DeS or DaS1, but then it also has areas that look like complete ass. There’s spots where Fromsoft’s own Armoured Core games on ps1 have better uses of textures and lighting. Inside of Earthern Peak is embarrassing, incredibly tiny texture endlessly tiled with no lighting or shading or anything.

But then places like Majula or Huntsman’s Copse look really good.
