Mods, simple as. You can turn skyrim into whatever you want, from coomer fantasy, sword and sorcery dungeon crawler, to "I want dark souls combat in every game, even tetris".

They really emphasize the word 'open' in Open-world RPGs. From skills, modding, exploring, etc.

They peaked at Skyrim, everything after just felt like Skyrim but less.

They (rightfully) get a lot of criticism for dumbing down their games and for pervasive bugs, but to their credit, Bethesda open world RPGs are a lot more compelling, moment to moment, than most of the other open world games on the market. Even Skyrim features a lot of fun storytelling through notes, eavesdropping, and environmental cues when exploring dungeons. Clearing a minor dungeon can feel like a self-contained adventure at times. Character progression is generally pretty good too, ignoring Oblivion's autistic leveling system.

the fully simulated physics are fun and still surprisingly rare in games. the gore is also awesome. the games feel very free and unrestrictive in the way they toss you into the world and say "go explore".

And let's not forget that music is a very important part of a game lasting effect on you. Most game I remember fondly had great scores and the elder scrolls series have one of best, praise Mr. Soule. It adds a lot to the ambiance.

I wouldn't describe these as games, as they have no gameplay and people do not play them to win. They are more like digital heroin for burnt out trailer trash after a long day of working inefficiently for minimum wage and dumpster diving to find new things to hoard in their front lawn. Or maybe you're a neet that sleeps 20 hours a day and your brain can no longer deal with obstacles but you need to drown out the sound of your parents arguing for a bit. Or maybe you masturbate to something so deranged that it requires extensive custom modifications on a deviantart tier platform. Those kinds of people are who skyrim is for.
