It's one of those things that Japanese fetishize, like high school. There's a clear aesthetic difference between the original Animal Crossing and its sequels, especially NL and NH. You have much less control in the original game, and so it sort of feels like letting go and being transported to this place that has its own life that's going on without you. In NL and NH you can control so many more aspects of your town (deciding which villagers to have move in, whether they move out or not, ground patterns, terraforming, etc.) that it has lost this sense of "letting go". NH is a dollhouse for control freaks, and not a particularly deep one if you ignore all the customization. You control virtually every detail of what happens, and when you turn off the game nothing will happen without your consent.A lot of the original game's personality also comes from NoA's translation of the game, which was more like a rewrite. I haven't played Animal Forest, so I can't comment on it personally, but I believe the original game has less and more simplistic dialogue. Nintendo re-translated NoA's dialogue back into the Japanese game with Animal Forest e+, the Japanese rerelease that added additional content.
