How does the pawn system actually work when I’m offline for months. I come back and no one has hired my pawn after half a year. Then a day goes by, I rest again, and I have five hires. Kinda feels like a big, like when you reach level 200 in DDDA.

there's capcom "fake" hires in 2, when you check who took your pawn out it should let you see the arisen's status or their steam profile etc, if you can't then it wasn't a real person

although it does also prioritize recent players when it comes to choosing pawns to place in world etc afaik
